Super Food of the Month…

Super Summer Soup! A fresh, cool version of the warm winter dish, Gazpacho, is packed full of vitamin C goodness. And vitamin C plays a vital role in our immune system, helps fight heart disease and high blood pressure (by lowering the bad cholesterol and boosting the good).

A recent Tufts University study found that people who ate soup loaded with raw tomatoes, cucumbers, and green peppers for two weeks had significantly higher levels of vitamin C in their blood.

Cooking can reduce the heart-healthy benefits, so try your soup cold.
