Sensible (and delicious) Spokane Dinners!

Having trouble coming up with a fancy Spokane Dinner, and stuck going out to Spokane Restaurants? Bring out the big guns and create a meal that will rival anything served at the Spokane Davenport, and not break your pocketbook or your Spokane Diet resolutions!

Beef with Rosemary Mushroom Sauce:

1 (8oz) package pre-sliced mushrooms
1 cup dry red wine
1 lb boneless top sirloin steak (about ¾ inch thick)
Cooking spray
1 c chopped green onions
¼ cup chopped fresh parsley, divided
1 ½ tsp chopped fresh rosemary (or ½ tsp dried)
1 tsp balsamic vinegar
4 garlic cloves
1 10 ½ oz can beef consommé
1 8 oz can no-sodium or low-sodium tomato sauce

Directions:
1.Combine Mushrooms, wine, and steak in a large zip-lock bag; seal and marinate in fridge for 30 minutes, turning occasionally.

2.Remove steak from bag, but reserve the marinade. Cook steak in a non-stick pan coated with Pam over medium-high heat until desired doneness. Turn after about 3 minutes on one side. Remove from Pan.

3.Combine onions, half the parsley, rosemary, and remaining ingredients. Add this with the marinade to the pan. Bring to a boil; cook until reduced to about 2 cups (about 15-20 minutes), stirring frequently

4.Cut beef diagonally across the grain into thin slices. Place the beef on a serving platter and pour sauce over it. Garnish with the other half of the parsley.

Yields 4 servings (serving size 3 oz beef with ½ cup sauce). Calories 229; Fat 6.6 g (Saturated 2.3g, Monounsaturated 2.5g); Protein 30g; Carbohydrates 12.4g; Fiber 1.7g; Cholesterol 6.9mg; Iron 5.1mg; Sodium 479mg; Calcium 55mg

Serve this alongside a fresh salad (baby greens are available bagged at your local supermarket) with a no-fat dressing (calories vary), and 1 Cup serving of brown rice which yields 3.5g of fiber with 215 calories, 5g of protein, and a mere 1.5g of fat.
