Quick and Easy Spokane Dinner: Lemon Garlic Chicken Breast
Thursday, April 9th, 2009Looking for a quick and easy Spokane dinner? My Lemon Garlic Chicken Breast is the answer. Top off your salad with this flavorful chicken or just add some brown rice or whole grain pilaf and a lot of veggies for an easy and quick meal.
Marinade Ingredients:
- Juice of 1 Lemon
- ¼ Cup white wine
- 2 Tbs. olive oil
- 1 Tbs. minced garlic (about 4-5 cloves) or more to suit your taste
- 1 Tbs. dried herbs of your choice; rosemary, basil, thyme, anything you like
- 1 Tsp fresh ground pepper
- 1 Tsp salt
Add all marinade ingredients in a gallon sized zip top bag and mix well. Add 4 boneless skinless chicken breasts to the zip top bag and let it marinate while you prepare the rest of your dinner.
Marinate at least 20 minutes and up to 24 hours. Of course the longer you marinate the chicken the stronger the flavor.
Marinating Tips
Marinating is a great way to add a lot of flavor to meat without adding a lot of fat and calories. Skinless boneless chicken is a great lean meat to marinate since it absorbs favor fairly easily it is easy to keep it healthy.
This recipe is also a good for marinating lean boneless pork loin, another healthy lean protein, or even vegetables like portobello mushrooms or zucchini.
Get creative with your marinade. Change it up by changing the type of wine and the herbs you use, to create a variety of quick and easy dinners. Use a sweeter wine for a sweeter taste or substitute balsamic vinegar for the lemon.
A good marinade has a base of certain flavors: sweet (wine/fruit juice), acidic (lemon juice/balsamic vinegar), savory (garlic, herbs), oil (olive/sesame/butter) and salty (salt/soy sauce/oyster sauce). Then add other flavors to your own taste from there.
Spokane Dinner Made Quick and Easy
Remove chicken breasts from marinade add to a preheated grill or hot skillet with enough olive oil to lightly coat the bottom of the skillet.
Sear the outside of the chicken over high heat or flame until golden brown to keep the flavorful juices inside. Then reduce to medium to low heat to complete cooking the chicken to an internal temperature of 165 degrees.
For a light flavorful sauce to top the chicken sometimes I make a double batch of this marinade and set aside half before adding the chicken. Cook and reduce the reserved marinade over medium heat, stirring constantly until your sauce reaches the desired consistently.
I like to serve my Lemon Garlic Chicken Breast with a bright green veggie like broccoli or asparagus and a whole grain or brown rice pilaf for a quick and easy dinner.
